End of Summer Berry Apple Crisp
The easiest type of pie to make is a crisp, One of the most delicious pies you can eat is a crisp. It is a no brainer that your will be making crisps with your seasonal fruit from now on, once you make this easy, crazy delicious recipe. This dessert is the perfect blend of end of summer fruit such as cherries, and plums with the early harvest of apples. There is no pie crust to roll out. Everything happens in one mixing bowl .It is so easy that I recently made this recipe with one hand while I filmed the making of it on my Facebook Live.
One of my favorite ingredients for this recipe is the Summer Berry Sweet Dip Mix . It is made as a topping for fruit or yogurt but I wanted to make this crisp special and used it as my spice mix instead of cinnamon which is commonly used for oatmeal crisps.
The Recipe:
Filling
3 small Fiji or Gals apples cut into small pieces and lightly steamed
2 small plums cut into small pieces
20 cherries pitted
Zest and juice of 1 lemon
1 tsp. vanilla extract
1 T. potato starch
1 T flour
3 T of Epicure Summer Berry Dip Mix
salt to taste
Crust
1 c. old fashioned oatmeal( not steel cut )
1/2 c. flour
1/4 c. organic sugar
1/2 package Miyokos butter cold and cut into small pieces
salt to taste
Put all filling ingredients into a large bowl and stir. Transfer to glass or ceramic pie dish. Next add your crust ingredients right on top of your pie filling and crumble the topping between your fingers until somewhat mixed. Don't worry as it all bakes well together. You really cannot mess this one up. Seriously .Trust me. It's all delicious once it comes out of the oven.
Bake in a 375 degree oven for 30-40 minutes until bubbly .Enjoy !
